Almond toast

The best way to start the day is with a good breakfast and a nice cup of coffee. Yesterday I was inspired by this decadent recipe and I wanted to start the day with a treat  even though I knew that to burn all those calories I had to workout more than usual. I think once in a while is worth to have a breakfast like this.  Ideally is better to prepare it with a brioche loaf but I did not have the time to bake it and I used what I had at home. I hope you enjoy it too.



Ingredients:
Almond syrup
1/2 cup of custard sugar
1/2 cup water
1/2 teaspoon almond extract
Almond cream
1/2 cup almonds
1/2 cup confectioners' sugar
3/4 cup butter room temperature
2 medium size eggs
1/2 teaspoon almond extract
4 big slice toast bread
sliced almonds to sprinkle


In a small sauce pan  put the same quantity of sugar and water. Bring to boil  the water in a medium heat let dissolve the sugar. Once the two ingredients are incorporated well, remove from the heat and let the syrup cool. It will take about 30 min. Once it is cooled enough add the almond extract and keep it refrigerated.
In a food processor grind the almond. Add the confectioners' sugar, mix the two ingredients and keep aside.
Beat the butter and sugar until soft and creamy add one egg at the time and incorporate well. Add the almond flour, almond extract and mix until you have a soft creamy mixture.
preheat the oven at 180C°. Prepare the 4 slices in a baking tray with parchment paper. Moist the toast with almond syrup. Spread the almond cream and sprinkle the sliced almond. Bake them until golden brown for about 30 minutes.
